12. Teriyaki Chicken Salad

Want a different take on your favorite Japanese dish? Combine 3 tbsp of soy sauce, mirin, and sake with 1 tbsp of minced garlic and 2 tbsp of brown sugar. Mix well until the sugar dissolves into the marinade. Set aside this mixture in a clean bowl. Place 4 boneless chicken thighs into the mixture and evenly glaze the meat. Sear the chicken in a skillet for 5 minutes. Make sure all sides are cooked evenly. Add the teriyaki sauce (a different one from the first mixture) and cook until it thickens.

Prepare the dressing. You will need 1 tsp of rice wine vinegar, ¼ cup of teriyaki dressing/ marinade, and 1 tsp of toasted sesame oil. Mix these ingredients well in a bowl. Keep in mind that the marinade should’ve been unused (the one you set aside). Mix all the salad ingredients. Season it with sesame seeds, green onion, and shredded seaweed.
